My Holy Grail Recipe: Martha Stewart’s Buttercream Filling For French Macarons

Hey There,

First let me apologize for the lack of food posts. Food is my first love, it was my first word, and I WILL ALWAYS LOVE FOOOOOOD (yes, I had to have a little Whitney moment). So to get back into the food talk, I first want to ask, what food posts would you like to see? Restaurant reviews, recipe suggestions, and/or more photos of things I’ve prepared? Moving on, I had to let you all know the recipe that changed my life. The first time I made buttercream it was not good. It was extremely sweet and hard to work with. I was afraid of making buttercream ever again. Then, I developed an interest for making French Macarons (which everyone should try because they are so delicious) and I needed a good filling. Enter Martha Stewart and her wonderful recipe. After making the recipe, I thought “hey, I should use this for cakes”. This buttercream recipe is perfect for icing cakes as well. It is much easier to make, work with, and it has less sugar. It is my holy grail buttercream recipe and I doubt I will use another for quite some time.

Martha Stewart’s Parisian Macaron Filling Recipe:


  • 3 large egg whites
  • 1 cup sugar
  • 1 cup (2 sticks) unsalted butter, at room temperature, cut into pieces


  1. In the bowl of an electric mixer, whisk egg whites and sugar. Set mixer bowl over a saucepan of simmering water and heat mixture, whisking often, until it feels warm to the touch and sugar is dissolved, 3 to 5 minutes
  2. Transfer bowl to the mixer, and fit with the whisk attachment. Whip on high speed until mixture is stiff and shiny, 3 to 5 minutes.
  3. Add butter, one piece at a time, and continue mixing until butter is thoroughly incorporated. The filling can be kept, covered and refrigerated, up to 1 week. Bring to room temperature before stirring.

Usually when I make this, I use packaged egg whites because I don’t want to waste eggs by failing to separate one. This recipe uses granulated sugar and NOT confectioner’s sugar which is another huge plus! You can add all kinds of things to this simple recipe to make any flavored filling you desire. In the past, I have added vanilla extract, lemon curd, and cocoa powder. The possibilities are endless! If you like buttercream, you should try this recipe.

Hey guys,

I have some pretty awesome updates since my last post. I bought a new webcam, so my video quality will be dramatically improved. I also ordered the two Limited Edition Wet n’ Wild Palettes online because I got tired of looking all over New York City for them. But best of all, Shaaanxo followed me back on Tumblr. If you are like “who the ?!?!? is that”, then you need to Get Your Life. I have been keeping up with Shannon (better known as Shaaanxo) for about 6 months now. She is an amazing makeup artist and a true inspiration. She does a variety of beauty vlogs as well as vlogs about her personal life. In these six months, I have grown to admire her. I talk about her as if I knew her personally to my friends and family, which usually leaves them perplexed. I found the courage to start making videos again simply from watching her. I’ve watched Shannon change a lot over the years through videos on Youtube and I believe it has been for the better. The first video that I watched on her channel was about tips for aspiring Youtube makeup artists. As I continue to find my voice, I keep her thoughts in mind. It’s the support of my followers, which now include Shaaanxo that keeps me driven to keep going. Thank You All!

New Features, New Media, and a New Commitment

Hey All,

I know, I know, I always seem to be busy. However, I have not forgotten blogging all together! I have managed to stay current on Instagram…too bad you didn’t know my username. My username is chefobuddy (who could have guessed). In addition, my Instagram feed is displayed on my blog so that anytime you swing by, you can see my new pics. I also opened a new YouTube account also called Chefobuddy so go check that out. Yes, I will finish talking about that Bruno Mars concert. When? I have no idea. More importantly, my mom’s birthday/ my 2 anniversary is coming up so I’m hopefully going to film a get ready with me video for that. I’ve got a job now, so I’ve been working almost all of the time. I have not forgotten you though, trust and believe me! In the next week, I am going to work to make all my social media accounts link up so you can find me anywhere (but not actually anywhere…). I hope all has been well this summer for all of you. Last but not least, a new promise… To post on this blog OR post a video (which also ends up here) every Sunday. I love you so much for just keeping up with me and caring.

One Of The Best Night’s Of My Life: Part 1 of the Moonshine Jungle Tour Review

I have spent this weekend trying to find the words to describe one of the most amazing concerts of my life. I literally had an out-of-body experience. I sang along, cried, and tried to imagine that the night of June 29th was a private show and not a concert. Any artist can sing and dance, but Bruno Mars, he gives you the performance of a lifetime. The Moonshine Jungle Tour is the ultimate house party minus the house. It had bright lights, confetti, and (near) deafening sounds that shook the room and the concert goers alike. There is so much to talk about that I will be doing a mini-series of posts reviewing the aspects of the concert. The following post will be about the experience.

Bruno Mars and his amazing band mates are masters at engaging the audience. In the beginning, Mars gave us one simple task, enjoy ourselves. I can’t speak for everyone, but most of the people were singing along and dancing as if no one was watching (and no one was). Lucky for those of us in seats that were pretty far from the stage, there was monitors in  the newly built Barclay’s Center so that everyone could see him up close. Bruno Mars has a voice that can bring tears and smiles in the same breath. I even found myself crying to one of the slower songs that really hit home for me. Although Mr. Mars is “the guy on the ticket” as he put it, he is certainly a team player. His band of Hooligans spent almost as much time in front as Bruno Mars himself. In addition, all of them men had on the same red suits and leopard print shirts making Mr. Mars more of a front man than a solo artist. Strobe lights and pyrotechnics lit up the room while canons were fired to knock our socks off, and they did. After it all, I left with the satisfied feeling that I got my money’s worth and then some! I knew when waited an hour on the Ticketmaster website back in March to get my tickets that this was going to be an entertaining night, but I had no idea just how much.

Over the next few days, I will get in-depth about all of the aspects that made up with amazing night and inspired my friend and I to start saving our money to see Mr. Mars one more time. In my next post, I will cover the set list and how his mashup of r&b hits including “Pony” by Ginuwine and “My Boo” by Ghost Town DJs almost made me fall out of my ‘nosebleed’ seat.
